
Strawberries are one of my favorite summer delights! Who doesn’t have a fond memory associated with strawberries! We all enjoy eating the berries alone or in dishes like strawberry shortcake and colorful berry tarts. So when I saw strawberries at the market for the first time last week I felt like celebrating and I also felt challenged. The foodie in me said ‘what can I do with this berry that is unique and different, a new twist on an old favorite?’ After hanging around in the produce section for a while, cruising the aisles of the grocery & the market, and perusing my cookbooks, I hit upon something exciting! Our family and friends enjoyed this and I hope that you will too.
Ingredients:
· 1 - 1.5 liter bottle of red wine (Cabernet Sauvignon, Merlot, Rioja, Zinfandel, Shiraz)
· 1 Lemon, 1 Orange, 1 Lime - cut into circles (across the grain, so that you can see the pie shaped pattern)
· 2 Red apples, 1 Green apple – diced (bite sized pieces)
· 4 Tbsp sugar
· 5 Shots of Triple Sec (can substitute Grand Marnier, gin or vodka)
· 1 Small can of cubed pineapples (with juice)
· 2 Cups of strawberries
· 1 – 2 liter both of Ginger Ale
· Long tooth picks – to eat the fruit
Preparation: Pour wine into a large punch bowl. Add all fruit except strawberries. Add liquor. Chill overnight. Just before serving, remove from fridge and add strawberries and Ginger Ale. May be served over ice. Be sure to serve with toothpicks to enjoy the fruit.
